Sure, UHC stands for Ultra hardcore. In Ultra Hardcore mode, the only difference to the regular Hardcore is that you don't naturally regenerate health! This difficulty is extreme, so it is advised to try hardcore mode first to gain extensive experience, and move on to this difficulty when you think you are ready.

What happens once you die? On *certain* servers, when you die, you have to buy a fee to rejoin. Will it be like that, or will you just lose everything?

Well... there's 2 kinds of UHC. The one that is probably gonna be added is the type where players play normal survival (without regenerating health) and collect their materials. This also happens while a world border moves in and shrinks the entire world to 100 blocks (or about) over the course of some time (usually 1.5-2 hours). People also fight to the death in this. Last team (or if there are no teams, player) alive wins.
