Since most Links are easy enough to take out, I would suggest either taking away all or most of the ender pearls. These allow the Links w/ barely any skill to just run away whenever they're low, which they can do easily since they have 30 rows of hearts. Taking away their ability to run also...

If nobody knows this, I'll say it. Shifting reduces stomping damage. Even if they fall directly on top of you when you're shifted, you won't die.
