Partitioning drives is easy. Its setting up a raid array and getting all your old files onto it that's not fun

On my laptop, and yea it is easy, just annoying. and yea I have moved files over as well, lots for clients. Was so repetitive. lol

Have you saved a system image onto an external drive, set up two SSD's in Raid 0, and tried to reimage that raid array using the image you created?
